After the initial tasting, Keith spoke with the owner and learned he slow-smokes everything first, then finishes on the grill — the pieces they got were pulled off before the char step. The owner let them try properly charred pieces, which they ate without sauce and loved even more. Keith called it “one of the best places we had since we’ve been here” and the family left $3,000, giving the owner a quiet heads-up that things might get busy. The whole experience — from the chance discovery to the food to the owner’s kindness — felt, as Keith put it, like no mistake.
