Me and my wife were leaving a grocery store when we saw this line out the door at this ramen place. They had a sign outside that said, “This is the best ramen in Vegas, and if you don’t believe it, come try it.” So that’s what we’re doing.

I got it. Let’s try it. Rate it 1 to 10.

We spent around $55 — $55 and like 17 cents. I’m not sure because I didn’t check the receipt. The customer service, my wife said, was good. But one of the main reasons she thinks the line was out the door is that the person at the front was a perfectionist. She watched him pack up the order, and he was taking his time because he wanted everything to be perfect, which isn’t a bad thing. But the space is also really small, and that’s probably one of the main reasons why the line was out the door.

And it could be because they’ve got some of the best ramen. I wanna see. I would like to see it. I’mma show you what I got, and we’re gonna try it, rate it 1 to 10.

Ibiza Ramen (forgive me if I pronounce it wrong), which contains pork broth, boiled egg, seaweed, bamboo shoot, green onion, kikurage, and pork chashu, served with thin noodles.

Spicy Tonkotsu: pork broth, homemade spicy oil, spicy meat, green onion, kikurage, and pork chashu, served with thin noodles.

And last but not least, Black Tonkotsu: pork broth, black garlic oil, green onion, kikurage, and pork chashu, served with thin noodles.

And I lied, we also got dessert — green tea mochi.

There’s only one noodle place I go to here in Vegas, and it’s called Shang Artisan Noodle. It’s the best noodles out here, I ain’t gonna lie. In my opinion, at least. Let’s see if they’ve got some competition.

This is hot. Like, hot hot. You see the steam coming off of it? I don’t know if y’all can see it, but— oh, ah, ah! Shit, shit. That is straight out the pot. I wasn’t ready for that.

This is the original Emi Ibisu, yeah, the signature, the first one. I’m a thicker noodle kind of guy, or a shaved noodle, but I get thin noodles every now and then. Hold on.

The issue with 90% of ramen places I go to is the broth doesn’t have any flavor. This broth? This broth is packed with flavor, and it’s like the perfect amount of salt, in my opinion. It might be salty to some people, but it’s real earthy. There’s a lot of garlic in it. Let’s see if it pops.

Oh, it’s like medium. I like a soft-boiled egg personally, but… hmm. The egg is cold. I don’t like that. 9.2 out of 10.

That’s really hot, but that is really good. Yeah. And surprisingly, I can’t stand thin noodles, I don’t know why, but I would give this 8 out of 10.

This is spicy. Trying not to pour it on myself. It’s been in the car for about, like, five minutes now, and it’s still steaming hot. Be careful, it’s hot, hot.

I just saw the color of this broth. I’m already knowing it’s about to be spicy. It’s red red. Just ‘cause you double up on a word doesn’t make it more red. I just said spicy, spicy. Red red. Get the… oh, out of here. Come on out of there. Oh, shit. The noodles.

Hmm. Hmm. Wait for the spice. Not crazy spicy. There’s some spice in it, but it’s not spicy. Is it a kick at the end, or is it creeping up? Not really. More like a chest burn than a spice-on-the-tongue kind of spice.

Spice level: I give this like a 2 out of 10.

Flavor level: It’s up there with the other one, but not as good in my opinion. 8.7 out of 10. I liked how simple the other one was.

Now, it’s the black one. I love garlic. Like, a lot of garlic in there too. I don’t know if you can see it, but it’s real black. Like, real black. Black black.

Oh, that’s strong. Open your nostrils up, boy. Oh, it’s like burnt garlic. Whoo, is that strong. That’ll clear you out. It tastes like the garlic that’s at the bottom of the pan when you get done sautéing garlic, or like when you’re making something with garlic and you get the little remnants at the end. That’s what this tastes like to me.

Yeah, I’m not the target audience for this, but it’s still good, and I can see people really liking this. But for me, this is my least favorite. It’s not super low, surprisingly. 6 out of 10.

I’d be lying if I said I was surprised that the line is out the door. I’m not surprised one bit. And in my opinion, Ramen Ebisu has some of the best ramen that I’ve had in a long, long, long time.
